Prepare ingredients for curly soup with egg and chicken. Legs, thighs, chicken legs — in my opinion, the best chicken parts for soup. But you can also use chicken breast. Leeks can be replaced with onions. I use parsley, but dill is also good. Or maybe a mix. If there is no fresh greens, use frozen greens.

Step 3Finely chop the onion into half rings and grate the carrots.

Step 4Over low heat, lightly fry the onions and carrots with butter. If you don’t need any golden brown crusts, then I often use butter. It has a low combustion temperature, but is suitable for light sautéing. I love the creamy taste. For now, let the chicken cook, the frying is ready, then we’ll just assemble the soup.
