Step 1
To prepare this delicious homemade bread, we will need the following ingredients: premium wheat flour, drinking water, nettles, butter, granulated sugar, dried garlic, salt and instant yeast.

First you need to blanch fresh nettles (100 grams). To do this, bring a couple of glasses of water to a boil in a saucepan and lower the greens. There is no need to boil it at all — just let the nettles soften (maximum 1 minute). She will stop burning. Place the mixture on a sieve to drain and let cool slightly so as not to burn your hands.
Step 3
Squeeze out the blanched nettles and place them in a deep bowl. Add water (200 milliliters), as well as a tablespoon of sugar and one level teaspoon of salt with ground garlic. In general, be guided by the weight of the nettle: if you squeeze it poorly, just add less water.

We punch everything with a submersible blender to get a homogeneous green mass. You can puree nettles in a glass blender. Let sit until the mixture is slightly above room temperature.
Step 5
Sift 400 grams of wheat flour into a mixing container. Add a heaped teaspoon (5 grams) of instant yeast. Mix.
Step 6
Pour over the nettle mixture.
Step 7
We begin kneading the yeast dough (by hand or using a dough kneader with a hook attachment). When almost all the flour has absorbed moisture, begin adding soft butter (50 grams). During the kneading process, you need to adjust the amount of flour. Additionally, I added another 30 grams. You need to knead for quite a long time — about 15 minutes.
Step 8
The result should be a very soft, sticky yeast dough with a pleasant green color. We round it into a bun and put it in a warm place to ferment for one hour. I put the bowl with the dough in the microwave, in which I preheated half a glass of water.
Step 9
In an hour, the yeast dough for homemade bread will have tripled in size.
Step 10
Sprinkle the work surface with wheat flour (here I use another tablespoon or 20 grams). Transfer the dough.
Step 11
Knead it into a not very thin layer. I suggest molding hearth bread into a round shape, and you can bake it in the form of a loaf or even in a mold.

Fold the dough as I showed in the photo.

Then we fold the opposite edges.

Pull the dough towards the center to form a round piece. We pinch the seam.

Turn over and round, rotating the workpiece with your palms.

I decided to proof the future nettle bread in a special rattan basket (it needs to be properly sprinkled with flour so that the dough does not stick). That is why we place the bun with the seam facing up. Cover with a light towel and let rise in a warm place for 40 minutes. If you plan to bake the bread on a baking sheet (I recommend lining it with parchment), immediately place it on the seam.

Carefully transfer the workpiece onto a baking sheet.

I made a cut on the side with a knife so that the nettle bread would open up beautifully.

Bake in an oven preheated to 200 degrees for 10 minutes, then reduce the temperature to 180 degrees and bake for about 30 minutes. I have an electric oven, top and bottom heating, no convection.
