This easy baking recipe includes the following ingredients: pumpkin (already peeled), wheat flour, milk, sunflower oil (unflavored), chicken egg, granulated sugar, ground cinnamon, baking powder and a pinch of salt.

First of all, divide the peeled pumpkin pulp. We need to bake 200 grams until soft — wrap the piece in parchment and food foil, and then put it in the oven for 20 minutes. The temperature should be approximately 180 degrees. Cut the remaining 150 grams into small cubes.

Let's move on to preparing the dough. To do this, mix the sifted flour with baking powder, sugar, salt and ground cinnamon in a large bowl.

Mix all the dry ingredients thoroughly.

When the pumpkin is baked, take it out — the flesh has become soft and very fragrant. We don’t turn off the oven – very soon we will be baking cupcakes in it.

Now we need to grind the baked warm pumpkin, milk, egg and vegetable oil. To do this, it is very convenient to use a blender like this (in which it is customary to prepare cocktails) or an immersion blender.

Beat everything for about a minute — the result is a completely homogeneous liquid mass.

Pour it into the flour base.

Quickly knead the dough — you don’t need to do this for a long time until it is smooth, since they don’t like this kind of muffins (they won’t be fluffy in this case).

Add the diced pumpkin to the dough and mix again.

This is what the finished dough looks like — it is not liquid and does not drip off a spoon.

Place the pumpkin muffin batter into the prepared pans. I use silicone ones (the dough does not stick to them during baking), but I still insert paper cuff inserts — they are beautiful and convenient.

We bake the cupcakes for the first 20 minutes at 230 degrees, then lower the temperature to 180 degrees and bake for another 10 minutes. Pumpkin muffins rise very well (if you mix the dough correctly) and crack beautifully on top.

Take out the finished homemade muffins and let them cool completely. The aroma is simply indescribable: cinnamon and pumpkin, in my opinion, are just the perfect combination. So warm and so cozy.

As you can see, fairly easy baking recipes, subject to basic conditions, always give excellent results. So our pumpkin cupcakes were a great success.
