  • Prepare ingredients for cabbage soup with fresh cabbage and pork.

    A whole piece of pork is not necessary at all. Pork meatballs and, for example, sausage (hot smoked) are also good.

    Instead of tomato paste, you can use tomatoes in their own juice or even fresh tomatoes. The tomato addition suits this soup very well.

    The bacon is already cut into small pieces. It's optional, but I love it for the slight smoky flavor.

  • Step 3

    Peel and chop the carrots and onions.

    The shape of the cut is at your discretion. I have onion cubes and carrot half rings.

    Add a tablespoon of oil to the pan and fry the bacon.

    The pan must have a thick bottom. We will cook soup in it.

    Add carrots and onions and fry for a couple of minutes.

    Roasting always brings out a richer flavor for the soup.

    Add tomato paste and fry for another minute.

    Roasting the pasta softens its flavor and acidity.

    Cut the cabbage into checkers or strips.

    Place the meat and broth in a sieve.

    In this way, the broth is filtered from the remaining coagulated protein.

    Add cabbage, meat, meat broth to the pan and add about another liter of water or broth. Pepper.

    Let it boil.

    I have a rich broth, so I don’t add salt at first, only at the end, if necessary. If you just use water, add salt.

    Add bay leaf, potatoes to the soup and cook everything for about 15-20 minutes.

    During this time, my young cabbage, meat, and potatoes were ready.

    If you take a late variety of cabbage, the time will definitely increase.

    I have pork neck and after half an hour the pieces were soft. Always check and see the tenderness of the meat you choose. You need to cook longer.

    At the end, add herbs, garlic and adjust the soup for salt and pepper.

    Boil the fresh cabbage soup for another minute.
