To make a baking powder at home, we will need wheat flour (I use the highest grade), citric acid and baking soda. If you need a gluten -free baking powder of the dough, instead of wheat, use rice flour in the same amount. Potato or corn starch is perfect.

We turn on the kitchen scales, weigh an empty container, reset and pour sifted wheat flour. We need 48 grams.
Step 3
Then we do the same with food soda — we measure exactly 20 grams.
Step 4
And finally, the queue of citric acid — we need 12 grams.

In fact, it remains only to thoroughly mix all three components and the home baking powder will be ready. However, I advise you to further add everything in a coffee grinder or blender, since soda, citric acid and wheat flour have a different degree of grinding. For example, citric acid is characterized by rather large crystals, while wheat flour is a powdery powder. And we need to combine all this and bring to the same state.
Step 6
Literally after 30 seconds, a completely uniform powder of the home baking powder is ready. It can be immediately used to make baking.
Step 7
You need to store the baking powder in a sealed dish, which is pre -dried and completely dried. You can even dry a hot hairdryer so that there is probably not a drop of water left. In total, we get 80 grams of ready -made homemade baking powder. At the beginning of the recipe, I wrote 16 servings, focusing on the fact that, as a rule, this product is used in teaspoons, and we got 16 of them (1 teaspoon of baking powder is 5 grams).
