Step 1
The recipe for this delicious and aromatic cake includes the following ingredients: wheat flour, sugar, red dry wine, butter (with fat content of at least 72%), medium-sized chicken eggs (45-50 grams each), oranges, peeled walnuts, raisins without bones, bitter chocolate, ugly chocolate. Cocoa powder, baking powder of dough and spice in a dry hammer form (cardamom, ginger, coriander and nutmeg).

First of all, you need to prepare some products and simultaneously turn on the oven at 180 degrees to heat up. In a small saucepan or saucepan we put 60 grams of washed raisins, 40 grams of butter and 30 milliliters of red dry wine. The orange is thoroughly for me, dry it and with the help of a grater we remove the zest — put it in a saucepan. From the fruit, squeeze the juice and pour 60 milliliters into the dishes. We use the rest of the juice in other dishes or just drink. We put the saucepan on medium heat and, stirring, boil the contents for a couple of minutes after boiling. We leave to cool to room temperature.

In the meantime, we fry a little in a dry pan, in the oven or microwave, peeled nuts (70 grams) so that they become crispy and fragrant. Cool them and chop them in any convenient way. Personally, I like to do it in a blender, but you can chop the nuts with a knife. Choose the degree of grinding to your liking — you can large or completely in small crumbs.

Prepare a dry mixture for cupcake. In a separate bowl, we connect 180 grams of sifted wheat flour of the highest grade, 2.5 teaspoons of baking powder, 2 teaspoons of cocoa powder, chopped nuts and spices (cardamom, ginger, coriander and nutmeg).

Mix everything thoroughly with a spoon or fork.

Then you need to grind 210 grams of soft butter (take it from the refrigerator for 2-3 hours) and 190 grams of sugar.

We rub all together for a few minutes (you can like a whisk or a mixer), after which we insert 4 eggs into a mixture one at a time and beat the mass.
Step 8
When the last egg is beaten, pour a dry mixture from step 5. We mix everything thoroughly with a spoon or spatula.

In step 2, we boiled raisins, oil, wine, juice and zest of orange, which have already managed to cool.

We pour the contents of the saucepan into the bowl with the dough and mix everything.

Next, pour 95 milliliters of dry red wine and again mix everything until smooth.

Now quickly melt 50 grams of bitter chocolate. You can drown chocolate not only in a water bath (there is another pan with boiling water at the bottom of the pan with chocolate), but also in the microwave (best in the defrosting mode — it is more gentle). In general, it doesn’t matter how you will do this, the main thing is not to overheat chocolate, otherwise it will curl up and go lumps.

Add melted chocolate to the dough and gently interfere with it.

As a result, it should be moderately dense and very aromatic dough for Christmas cupcake.

We take a suitable baking dish (I have 28x8x7 centimeters — length/width/height), the bottom and walls of which are covered with a cut of parchment paper. We spread the dough into the shape, leaving it with a spoon or spatula. So that the paper does not move, I temporarily fix it to the walls with ordinary clothespins, which I just remove it before baking.

We prepare our Christmas cupcake in a preheated oven at an average level of 50-70 minutes at 180 degrees. Preparation time depends on the size of the shape and features of the oven. We check the readiness with a wooden skewer or toothpick, which should exit the dry dough.

We let the ready Christmas cups stand in the form of 10 minutes, after which we take it out, remove the parchment and let it cool completely.

We transfer to a serving dish and decorate as desired.
