Step 1
The corn muffin recipe includes corn flour, corn starch, milk, butter, chicken eggs (I used 2 very large eggs instead of 3 medium ones), granulated sugar, a pinch of vanilla and baking powder.
Step 2
Turn on the oven to warm up — 180 degrees. In a bowl, combine corn flour with starch and baking powder. We sift through everything.
Step 3
In another bowl, combine chicken eggs with sugar and vanilla.
Step 4
Beat everything until foamy, and then add room temperature milk and soft butter. Beat again.
Step 5
Now add the flour mixture from the first step.
Step 6
Quickly knead a homogeneous dough.
Step 7
Place the dough into muffin tins — no more than half the volume. Silicone ones do not need to be lubricated. I got 12 pieces.
Step 8
Bake corn muffins in a preheated oven at 180 degrees for 15-20 minutes. Let them cool and then remove them from the molds.
Step 9
Help yourself, friends, to some crumbly sunny pastries! Bon appetit!
