Prepare all ingredients for teriyaki chicken with rice and vegetables.
An excellent substitute for chicken breast is thigh fillet. It's juicier.
For vegetables, I offered you my favorite minimum: zucchini, bell pepper and onion.
Potato starch can also be used.

Cut the onion, pepper and zucchini into strips, and finely chop the garlic.
The zucchini is young, so I don’t remove the skin or seeds.

Cut the breast into small strips, add salt, pepper and roll in starch.

While everything is frying, let the rice cook. 13-15 minutes will be enough.
Added 350 water. 3 grams of salt. The lid is closed, the fire is low. The rice turned out quite crumbly. Basmati variety.

In a hot frying pan, add a tablespoon of oil, fry the chicken for a couple of minutes until lightly golden.
Stirring, high heat.

Place the chicken, add another 1 tablespoon of oil and fry the onion for a minute, and then add the pepper.

Fry the onion and pepper for three minutes and stir in the garlic and zucchini for another minute.
We don't need completely soft vegetables. There should be a slight crunch left.

Return the chicken to the pan with the vegetables.

Pay attention to the thickness of the teriyaki sauce used. It’s very thick for me, so I’ll add about 50 grams of water to the pan along with the sauce.

Add teriyaki and water (as needed) to the pan, close the lid and simmer for three minutes.
Please note. I only salted the rice and chicken. Teriyaki has a bright, rich taste, so I don’t add extra salt to the vegetables.

While everything is stewing, chop the green onions.

Mix some of the onion and sesame seeds into the chicken and vegetables, and leave some for decoration.
Not necessarily. You can add absolutely everything to the pan.

Serve chicken with vegetables in sauce on a bed of rice.
While we were preparing vegetables and chicken, the rice arrived. If everything is chopped and prepared, then the same 13-15 minutes are enough for both chicken and vegetables and rice.
Sprinkle with green onions and sesame seeds, if left.

Teriyaki chicken with rice and vegetables is ready.
