Prepare ingredients for Chinese beef in a frying pan. The main thing in this dish, of course, is the meat, which is suitable for frying. You should choose a tenderloin, thin or thick edge. These types of meat cook relatively quickly and are tender. If such parts cannot be found, then it is better to marinate the meat beforehand or cut it into thin strips.
For brightness and beauty, you can take sweet peppers in 2 or 3 shades: yellow, red, orange, green. The only thing is that I don’t recommend taking only green peppers, as they don’t have enough sweetness.
Oyster sauce can be replaced with soy sauce. But keep in mind that the taste will be different. You can also take teriyaki or other Asian sauces that contain soy.
Leeks can be replaced with onions, but with leeks the taste is softer and more pleasant, in my opinion. Stem celery is optional here, but definitely adds extra flavor and texture.
You can take sesame seeds roasted or raw, and then fry them a little in a dry frying pan. Pink pepper can be replaced with red pepper, and instead of dry ginger, use fresh ginger — a root 5-6 cm long. Instead of apple cider vinegar, you can use rice vinegar.
The recipe also calls for cornstarch and should not be substituted with potato or other starch. Their properties and taste are different.

Cut the meat into cubes or cubes.
Remember that if you are not sure that the beef will be soft, it is better to cut it thinner.

Whisk 2 eggs in a bowl.

Place the meat in a deep bowl, add oyster sauce and stir.

Pour in the eggs and mix again.

Add starch and mix the pieces thoroughly until the mixture coats each of them.

Immediately prepare the sauce for pouring: mix water with 2 tbsp. l. starch, 100 ml oyster sauce, vinegar and sugar. Mix thoroughly with a spoon or whisk.
If you marinated meat in vinegar, then its amount in the sauce should be halved.

Cut the onion and celery into large half rings or rings.

Cut the pepper into strips if the meat is cut into cubes or ribbons, and into large squares if the meat is cut into cubes.

Squeeze the garlic separately or chop it with a knife.

Heat most of the vegetable oil in a frying pan over high heat. Place beef pieces in 1 layer. Fry for 4-5 minutes on a fire slightly lower than maximum (5 for an electric stove).
If you are cooking from 1 kg of meat, fry in 2 batches. It is important that the meat lies in 1 layer — to form a crust on each piece.

Turn the pieces over with a spatula or tongs and fry for another 4-5 minutes, reduce the heat (4/6 for an electric stove).

Place the finished meat in a separate container. Fry batch 2. Remove oil from the pan.

Heat the remaining oil in a frying pan, add leeks, celery, pepper and garlic. Fry over high heat for 5-7 minutes.

Add ginger, red pepper, salt and mix thoroughly.

Add sauce with starch and vinegar to vegetables.

Then pour in the fried meat and mix thoroughly.

Cover with a lid and fry for 10-15 minutes over medium heat (3/6 for an electric stove). Then add sesame seeds and mix thoroughly.
