  • Prepare ingredients for pork in sour cream sauce in a frying pan. I use pork tenderloin, the fat goes only along the outside of the piece, and I trim off the excess when slicing. You can take other parts, the main thing is that they do not contain a lot of fat. The meat should be at room temperature or so before frying.

    It is better to take sour cream with medium fat content — 20%. It gives moderate sourness and thickness. In any case, you should not use sour cream with strong acidity.

    The recipe requires a lot of onions. I use 2 parts onions and 1 part leek. But you can take only onions or add white onions, shallots or others to your taste.

    You need to fry the meat in refined vegetable oil — sunflower, olive or any other. But the choice of spices is individual. I use seasoning “For Pork”, in which the main ingredients are: coriander, mustard seed, onion, sesame, basil, and several types of pepper. You can also use universal seasoning, suneli hops, or limit yourself to pepper and salt.

    Cut the meat into cubes or cubes 2-2.5 cm thick.

  • Step 4

    Place the pork in the pan. I use a dish with a diameter of 28 cm; 800 g of pork fits perfectly.

    Fry over high heat until golden brown, 12-16 minutes, stirring 2-3 times during this time.

  • Step 6

    While the meat is cooking, make the sauce: mix sour cream with dry spices, add mustard if desired.

  • Step 7

    Add all the onions to the fried meat and pour in the remaining oil.

  • Step 8

    Fry the onion over high heat for another 7-8 minutes, stirring from time to time. The onion should turn golden and reduce in volume.

    Pour in 150-200 ml of water, cover with a lid and simmer over medium heat for 30 minutes (3/6 for an electric stove).

    Tip: taste a piece of meat before adding sour cream. If it is soft and tender, then you can move on to the next stage. If it is still too tough, simmer for another 5-6 minutes. You can add water if necessary.

  • Step 10

    After 30 minutes, add sour cream sauce. Add salt to taste.

  • Step 11

    Cover with a lid and simmer the pork over medium heat after boiling for another 1-2 minutes. Remove from heat and let stand for 5-10 minutes.
