For this recipe, only pork neck is suitable, but also shoulder and loin. When replacing meat, the baking time changes. For loin it definitely decreases.
My garlic heads are small. One weighs 40 grams.
About the extra seasoning. I always use a mixture of thyme, oregano and marjoram. I have all this already mixed in a jar. Favorite seasoning for pork.

Combine the contents of the blender with salt, pepper, cumin and a mixture of herbs.
If I have 1.3 kg of meat, then I take 13-15 grams of salt.

Coat the piece of meat evenly on all sides. Cover and marinate at least overnight, preferably for a day.
I always marinate for a day and a half.

Wrap the meat in foil, place it in the mold, and place the garlic wrapped in foil next to it. Bake at 170 degrees for 45 minutes. Then remove the garlic and leave the meat for another 40-45 minutes.
To be on the safe side, to prevent drying out, I always pour 150 grams of water into the mold.

The meat is ready. Carefully pour the resulting broth into a bowl.
You can then proceed with the meat as follows:
1. Screw it back in and keep it hot in the turned off oven while you make the sauce. This is the version if you are serving soon.
2. Allow the uncovered meat to cool completely and place it in the refrigerator or freezer. This is if you are preparing for later.

Using a spoon, scoop out the cloves of baked garlic directly into the saucepan in which the sauce will be cooked.

It is advisable to let the broth cool and skim off the fat on top.

Pour the broth into the saucepan with the garlic, let it boil and simmer for 15 minutes.
I get about 200 grams of broth.
It can be replaced with just any vegetable or chicken broth.

Pour in the cream and cook and evaporate for another 15 minutes, and then blend until smooth with an immersion blender.

Strain through a sieve.
If the sauce has not evaporated enough and you want a thicker consistency, you can add a little flour or starch. About a teaspoon.
If there is no time to evaporate at all, then thicken again with the same flour.
Stir the flour into a small amount of broth and pour into the sauce. Let it boil and turn it off. This is simply the simplest method.

To store when completely cooled, place the sauce and meat in the refrigerator. Valid for up to 3 days.
And another option. If you make it very early and the meat goes into the freezer for storage, then you don’t need to make the sauce. Just freeze the broth and roasted garlic separately. And when you need it, you take it out and cook this same sauce according to the recipe.
I always wrap the meat tightly in the same foil (in which it was baked), and then in a zip bag and in the freezer.
I don't like freezing creamy sauces. There are many nuances and a good result after defrosting is not guaranteed.
