Preparation: Step 1

  • Prepare all the ingredients for the preparation of home noodles of eggs. Eggs can be taken both chicken and quail, in proportions with chicken.

    Put the flour on the working surface with a slide. Make a deepening of this size in the center so that two eggs can fit freely in it.

    Break two eggs into a recess of flour. Add salt and with a fork gently stir the eggs, gradually grabbing flour from the edges. At first it may seem that the dough is liquid, but gradually the flour will begin to absorb eggs and dry out.

  • Step 4

    When the mixture becomes thick, start kneading with your hands.

    If the dough is too dry and crumbly, add 1-2 tbsp. l. water. If you want to make noodles more yellow, you can add 1 yolk instead of water.

  • Step 5

    Knock the dough for home noodles for 8-10 minutes, until it becomes smooth and elastic. Wrap in the film and leave to “relax” at room temperature for 20-30 minutes.

  • Step 6

    Sprinkle the work surface slightly with flour. Divide the dough into 2-3 parts. Roll each part into a thin layer with a thickness of about 1 mm.

  • Step 7

    Slightly dry the dough for egg noodles. Leaving rolled layers for 10 minutes — so it will be easier to cut them. If there is a pasta machine, use it for the convenience of rolling and cutting.

  • Step 8

    Turn the layer into a loose roll and cut with stripes of the desired width (5-6 mm for ordinary noodles, 3 mm for supa). Rise each strip from the roll and straighten it on a flat surface for drying.

    Carefully shake the chopped strips so that they do not stick together. You can sprinkle slightly with flour and shake again.

  • Step 9

    Homemade egg noodles are ready. The test recipe, as you can see, is very simple, and soups are much tastier!

    If you do for the future, then you need to put it on a table or towel and leave it for a day. Periodically turn noodles for more uniform drying. Ready noodles can be stored dried up to 2 months in a sealed container.

    How to cook fresh noodles:

    • Boil salted water.

    • Lower noodles, cook for 2-4 minutes until cooked.

    • Remove to a colander, rinse, if you use it in a side dish.
