In the summer heat, it is convenient to boil potatoes and eggs in the morning, and by dinner — just collect everything in a bowl. So the okroshka will turn out to be cold as it should.

    Choose bread kvass without strong sweetness — it is best combined with smoked meat and vegetables.

    For okroshka with smoked chicken, any parts of the bird are suitable — breast, hips. I use smoked chicken legs — they have a rich taste and aroma, which goes well with kvass.

    But there is another second option. Peel the potatoes before cooking, cut into cubes immediately and boil until cooked. So the process will take less time, but you need to carefully monitor so as not to digest — otherwise the cubes will collapse.

    Remove the skin from smoked chicken. Gently separate the meat from the bones.

    Cut chicken meat into small pieces, in size approximately like potatoes. Fat or too dry parts are best removed.
