Step 1
For the preparation of English scones, we will need the following ingredients: wheat flour, milk, milk (any fat content — I took 2.8%), butter (with fat content of at least 72%), raisins without bones, sugar, chicken eggs (fine — 43 grams in my case), baking powder and fine salt.
Step 2
Raisins without bones, wash and dry well. If the raisins are too dry, you can steam it for 5-7 minutes in hot water.
Step 3
We break the chicken egg from the milk and thoroughly spread everything to get a milk-vic mixture.
Step 4
We sift wheat flour in a bowl, add the baking powder of the dough (how to make it at home, read in this recipe), granulated sugar and a little salt for the balance of taste.
Step 5
Mix so that all dry ingredients are evenly distributed by the mixture. After that, add cubes of cold butter.
Step 6
With your hands (or the more convenient for you) we rub everything into the baby — literally a minute and everything is ready.
Step 7
Add the boiled raisins, mix.
Step 8
Pour into a dry mixture a milk-vic chatterbox from step 3.
Step 9
We quickly mix everything (with a fork, spoon, spatula or hand) so that the flour absorbs liquid components.
Step 10
We lay out on the table and do not long for the dough with our hands so that the island of flour does not remain. It is not necessary for a long time, it is important!
Step 11
We knead the dough into a layer with a thickness of at least 2 cm. If necessary, plow the working surface with flour.
Step 12
Cut the circle with a glass or any other convenient device.
Step 13
We transfer them to a baking sheet covered with baking paper. We do not mix the testing of the dough, but simply put on each other, clutching with your hand — so we will retain the layer of dough. We cut rounds again — in total, I get 7 blanks. If you want a ruddy top, grease future scones with egg yolk (I do not lubricate).
Step 14
We bake English scones in the oven warmed up to 200-210 degrees at the average level (I have only lower heating, without convection) for about 15-20 minutes. In the process of baking, buns should grow up at least twice and brown.
Step 15
We serve English scones with cold or warm (as you like more) with tea or milk, cutting along in half and scoring with butter, berry jam. Sasha, thank you very much for this delicious order. Prepare for health, friends, and pleasant to you appetite!
