Add 110 grams of softened (room temperature) butter and 80 grams of small granulated sugar (as an option, powdered sugar) to the bowl. Then we sift 270 grams of wheat flour (I have the highest grade, but I can also be the first), and we also put a pinch of salt for the balance of tastes.

We quickly break through everything together so that the flour absorbs a creamy mass. If in some places it remains, not so important.

At the bottom, we sift approximately 3/4 of the total volume of corn starch (I use 20 grams according to the recipe). So far, we put the form with the dough in the freezer and turn on the oven to heat up 180 degrees. I use the electric, the upper mode+bottom, without convection.

In the meantime, we will engage in fresh strawberries. Pour cold water into the volumetric dish and put the berries. Mix them carefully so that the sand and other garbage settled to the bottom.

We shift clean strawberries to a sieve so that water is water. Only after that we cut off the tails. If you wash the berries without tails, they are very quickly nourished with water, but we do not need it. In total, in a pure and dried form, we need 500 grams of fresh strawberries.

Sprinkle the berries with the remaining corn starch, evenly distributing it along each berry. Just shake the bowl with gently circular movements.

We lay out the battered berries on the sand dough, which was expected to turn in the freezer. We put a strawberry pie in an already preheated oven and bake for about 40 minutes.

In the meantime, we will make the preparation of meringue. We pour three proteins into clean and dry dishes for whipping. Add a pinch of salt and beat with a mixer at speed just above the average for about 4 minutes. During this time, the mass will become light and fluffy, like a foam. For several tricks, without stopping whipping, we pour 150 grams of small sugar.

We make maximum speed and beat the meringue to dense peaks. At the end, add 1 teaspoon of lemon juice and beat for another 1-2 minutes.

As a result, you should get a glossy and stable mass, which holds the shape perfectly and does not move at all.

On top of the berries we put the French meringue. You can, of course, put it with a culinary bag with your favorite nozzle (as, for example, in recipes for a pie with cranberries or with plums), but I wanted to make such a simple hat with an ordinary tablespoon.

We bake the strawberry pie with the same 180 degrees for about 10 minutes so that the Meringue grabs and lightly browned. Immediately after the baking, it will increase in volume, but as the pie cools down, it will settle and take its original shape — this is normal. You can serve such baking even in a warm form, at least completely cooled (or after the refrigerator). After a night spent in the cold, the filling will become more stable, and immediately after baking during a cut from the pie, a lot of strawberry juice will flow out. As for me, both options are good.
