Preparation: Step 1

Prepare products for making compote from cherries in a pan. To sort the cherry, separate the twigs, remove the spoiled berries, if any. Weigh the right amount of cherries. Keep sugar. I add a minimum amount of sugar so that it does not interrupt the taste of cherries. You can increase or decrease its amount to taste. Sugar can be replaced with honey, but it must be added to the already cooled compote.

Rinse cherries. To do this, put it in a deep bowl of cold water and rinse well. Catch the berries from the water and transfer the clean cherry into a colander so that the glass is water. If the berries are not very clean, dusty, then the procedure can be repeated 2-3 times.

Pour the cherry into the pan. Add sugar. It is better to take a larger container so that the compote does not run away during boiling. A three -liter pan is suitable for the indicated number of ingredients.

During boiling, light foam may appear. It should be removed. Berries at this moment come to the surface. Mix the compote and make sure that the sugar at the bottom of the pan has disappeared.

From the moment of boiling, cook the compote from the cherry literally a couple of minutes and turn off the fire. Close the pan with a lid and let the drink brew at least 30 minutes, and better for two hours.
In the cooling compote, the berries gradually settle to the bottom. The longer the compote is infused, the more saturated the taste and color it becomes. I usually cook compotes in the evening. During the night, the compote is well infused and in the morning I get a bright, fragrant, very tasty vitamin drink.

Pour the cooled compote from the cherries from the pan to the jug and store in the refrigerator. It can be served to the table as cold, for example, with ice in the summer heat. So in hot form as a third dish for lunch.
