Rinse well and cut the potatoes with small slices. In the same way, clean and cut the red onion.
I always rinse potatoes with a brush under a stream of water. I do not clean the skin, namely, I wipe it well from dirt and, if there is visible damage, cut them out.

Rinse and chop the tsukini and broccoli coarsely.
Cut the tsukini in large pieces, with a thickness of at least three centimeters.

Rinse the bell pepper, cut the bottom first, and then each of the sides.
As a result, you will get a sort of stub — seeds, a stalk and membrane.
Cut each part into large pieces.

Clean the garlic and pass through a special press. If there is no press, just chop it fine with a knife.

Prepare a fragrant dressing for vegetables in the oven.
In a bowl, mix olive oil, chopped garlic and Provencal herbs.
