  • Prepare the ingredients to make gingerbread men at home. From the specified amount of ingredients you get 25-30 gingerbread men. The main component is premium flour; you should not change it to corn, whole grain or any other.

    For the glaze you will need very finely ground powdered sugar. The coarser the grind, the more difficult it is to dissolve and achieve uniformity. As a result, lumps may appear and clog the thin opening of the pastry bag or nozzle.

    In a 2-3 liter thick-bottomed saucepan, combine honey, sugar and a full range of spices, except salt. Place on the stove and completely melt the sugar and honey at low power (2-3/6 for an electric stove).

    Stir the mixture thoroughly for 1-2 minutes. It will foam and then begin to return to its original state.

    Transfer to a floured work surface. Knead a little, no longer than 1 minute, to make the dough more homogeneous. The finished dough is soft, tender, not filled with flour and very pliable. It even sticks slightly to the table.

    Divide into 2 parts. Roll out into a layer 0.6-0.7 cm thick directly on the parchment.

    Add 0.5 tsp. lemon juice and beat again with a fork for 3-4 minutes. Transfer the finished mixture into a pastry bag with a nozzle with a 2-3 mm hole. Or just cut off the tip of the bag.

    Decorate the gingerbread men as your imagination and skill dictate. You can simply draw a mouth, eyes and buttons if you are afraid that the decor will not work out.

    Let the glaze dry for at least 2-3 hours.

  • Step 20

    After 2-3 hours you can put the gingerbreads away for storage until the New Year. If you do this 2-4 weeks before the holiday, then place them on parchment paper in a container, laying each layer with a new sheet of paper. Close the lid tightly.

    Important: check that the decorations are not too fragile, otherwise you will not be able to stack the gingerbreads on top of each other without damage.

    2-3 days before the holiday, add sliced ​​apples to the container in different corners of the container. Just so that the pulp does not come into contact with the gingerbread. You can place it on the gingerbread, skin side down. The gingerbread cookies will become very soft again, but much more fragrant than immediately after baking.
