Preparation: Step 1

    Since we do not need a lot of meat in the soup, and we will cook on the chicken breast on the bones, we need to immediately separate the meat from GThe ores (or another chosen piece of chicken, since you can cook on the legs or wings). In the future, we will use the meat that remains on the bones.

  • Step 3

    Place chicken bones in a pan, pour 2.5 liters of water and put on fire. After boiling water, it is necessary to remove the foam and cook on low heat for 30-40 minutes.

  • Step 4

    When the broth is cooked, the onion needs to be cleaned and cut into cubes.

  • Step 5

    Heat the oil in a pan. Add onions. Fry for about 3-4 minutes until the onion becomes transparent.

  • Step 6

    Clean the carrots. Grate on a large grater or cut at your discretion. I cut in circles.

  • Step 7

    Add carrots to onions and continue to fry the vegetables.

  • Step 8

    Rinse champignons. Cut into thin plates.

  • Step 9

    Add champignons. Fry for another 5-7 minutes until the mushrooms decrease in volume and become slightly golden.

  • Step 10

    Get chicken bones from broth. ABOUTSet cool. Strain the broth (if necessary, it is quite possible that the broth will be clean and without filtering) to remove excess particles.

  • Step 11

    When the vegetables are fried to such a state, turn off the fire.

  • Step 12

    Add fried vegetables and mushrooms to the broth. Continue to cook soup over low heat for 10-15 minutes.

  • Step 13

    Prepare home noodles for chicken soup.

    Sift the flour on the working surface with a slide. Make a deepening in the center of the slide, drive one egg there and add a pinch of salt.

  • Step 14

    Knead the dough, gradually interfering the flour in the egg. If the dough is dry, add 1-2 tbsp. l. water. Make 5-7 minutes until it becomes smooth and elastic.

    Leave the dough «relax» under a towel or film for 15-20 minutes.

  • Step 15

    Roll out the dough into a thin layer of 2-5 mm thick. Turn into a roll and cut noodles 3-5 mm wide (or thinner, if you like).

  • Step 16

    Sprinkle the noodles with flour and shake slightly so that it does not stick together.

    Remove meat from bones.

  • Step 18

    Return the chicken back to the broth. When he boils again, add noodles. Cook soup with home noodles for about 5-7 minutes, until the noodles become soft. Try to taste soup. Add salt, pepper if necessary. Remove the soup from the heat and let it brew under the lid for 5-10 minutes.

  • Step 19

    Homemade noodles are ready.

    Pour the soup on plates, decorate with fresh herbs and serve hot with a slicer of bread or croutons.
