Preparation: Step 1

  • First you need to prepare all the ingredients, so that then nothing distracts from cooking a soup with meatballs.

    Fictional meat (pork is used in this recipe) with cold water and dry with paper towels. Peel vegetables: potatoes, carrots, onions. Rinse, examine the dill — if there are hard stems, remove them, but not throw them away: such branches are perfect for preparing homemade broth in the future.
    To measure the desired amount of pasta of “stars” is approximately 60–70 g, or one handful. I use frozen bell pepper — it does not need to be defrosting. If you take fresh Bulgarian pepper, you need to cut it with thin strips.

  • Step 2

    Finely chop half the onion. If you wish, add one clove of garlic — it will give a light aroma to home soup, especially if you like more piquant dishes.

    Grate the carrots on a large grater.

  • Step 3

    Heat the pan, pour a little vegetable oil, put onions and carrots. Fry over medium heat for about 5 minutes, stirring periodically. Vegetables should become soft and slightly golden — this is the basis of the fragrance for the future delicious soup with meatballs. While the vegetables are fried, you can do herbs and potatoes.

  • Step 4

    Finely chop dill. You can also use parsley — it will give a slightly different note of taste. Leave half the greens for minced meat, the second is to put it to add to the soup closer to the end of cooking.

  • Step 5

    Cut peeled potatoes with thin strips or cubes — as you are used to. Pour cold water so that it does not darken. This is important if the potatoes are prepared in advance.

  • Step 6

    Put a pan for 3 liters on fire and pour water.

    Meanwhile, cook homemade minced meat. Scroll the pork along with the remaining soul mate through a meat grinder. Add salt (1 tsp without a hill), a little greenery and, if desired, black ground pepper. Knead the minced meat well — it should become homogeneous and sticky.

  • Step 7

    From the resulting minced meat, roll meatballs the size of a walnut. It is more convenient to do this with wet hands — so the minced meat will not stick.

    💡 Advice: It is convenient to cook meatballs in advance and freeze. In the future, when you want to quickly cook the soup, it will be enough to lower the frozen blanks into boiling water — the cooking time will be significantly reduced, and lunch will be ready much faster.

  • Step 8

    When the water in the pan boils, gently lower the meatballs there. Bring to a boil again and remove the resulting foam with a slotted spoon. Then add prepared fried vegetables, bell pepper and potatoes to the pan. Salt the soup (approximately 1 tbsp. L. without a hill), add bay leaf.

    From the moment of repeated boiling, cook 12-15 minutes over medium heat until the potatoes become soft.

  • Step 9

    When the potatoes are ready, pour the pasta-outlets and the remaining greens. Mix gently, try the broth for salt and crush if necessary. Bring to a boil again and cook for another 3 minutes — pasta reaches very quickly.

    💡 Important: Do not digest pasta-flashes-otherwise they will be twisted and lose their shape. It is better to turn off the fire a little earlier and let the soup reach the lid.

  • Step 10

    Leave the finished soup with tails with meatballs under the lid for 10 minutes — during this time it will infuse and become even tastier. Then pour on plates. You can serve with bread, crackers or add a spoonful of sour cream for cream taste.

    This is a great soup for children — it is gentle, light, with small pasta and soft meatballs that are easily a spoon. Yes, and adults will not refuse such a homemade tasty 🙂
