As soon as the berries begin to boil, add starch, mix and boil for another minute. The filling should thicken. This is important — the liquid filling can ruin the texture of the dough during baking, and the cherry strap will turn out to be raw.

Now that the dough has become soft, roll it into a rectangle with a thickness of about 3 mm. It is more convenient to do this right on the parchment sheet — then with it it will be easier to turn the struadel with cherries and transfer to a baking sheet.

You can lubricate the surface of the dough with melted butter and sprinkle with sugar — then when baking, a crispy caramel crust will appear.

Gently turn the strap with a roll, helping yourself parchment. First bend the side edges, then — carefully, but tightly, twist into a roll.
Advice: Do not squeeze it — give the strudel a little space inside so that it does not crack during baking.

Make a few oblique incisions from above — for the output of the steam. This will help to avoid ruptures and make your cherry strudel more neat.

Pinch the edges of the roll — carefully, but without fanaticism. So the filling will definitely remain inside, and the dough will not spread in the oven.

Beat the egg with a fork until smooth — it will be needed to lubricate the roll.

Lubricate the surface of the stroll with a beaten egg — so it turns out to be golden, glossy and appetizing.
