Put a heavy pan on the stove — cast -iron is ideal. Turn on strong fire and warm up the pan to the haze. This is important: a good crust is only on a very hot surface. Add vegetable oil and warm it for another 20 seconds.
Put the steaks on a hot pan. Fry on the one hand for 2-3 minutes (depending on the thickness and the desired fry).

Remove the beef from the pan and transfer to the plate, cover with foil and let “relax” for 5-7 minutes. This is necessary so that the juice is evenly distributed inside the meat, and not flow out when cutting. Thanks to this, beef steak will turn out juicy and delicate.

In the same pan where the meat was fried, prepare a cream sauce for a steak. Without removing rosemary and garlic, pour fat cream (20-30%), reduce the fire to the middle and cook for 4-5 minutes until the sauce begins to thicken.
Add granular mustard and grated cheese — you can use parmesan or a similar hard variety. They will give the sauce the depth of taste and light piquancy.

A wooden spatula carefully scrape all the fried pieces from the bottom of the pan — they carry a concentrated meat taste. Continue to cook the sauce, stirring until it becomes smooth and cream. If necessary, add salt and pepper to taste.
