Prepare the ingredients: get cream cheese in advance, clean the carrots and only after that weigh. For the filling, you can use any soft cheese to your taste, including ricotta or masquearpone. However, Mascarpone has a denser consistency, it is more difficult to smear it along the cake.
In the recipe, I use a mixture of dill and parsley for the filling, you can take any greens. Including — spinach or microwave. A very beautiful and unusual roll will turn out with the addition of greens of different shades: red, light green, dark.
Tip: butter for frying carrots is suitable with a fat content of 72.5%. Choose high -quality oil, not a spread with reduced fat content.
Garlic for a roll with carrots and cheese I use dried, since it has a softer taste and even every other day it does not change. But it is quite possible to take fresh-1-2 cloves.

Grate the carrots on a fine grater. I am preparing a double portion, so there are more vegetables and other ingredients. In parallel, put the vegetable oil with butter in a pan.

Cool the finished carrots directly in the pan or transferring into a spacious container — so it will cool faster.
Tip: You can speed up the process by putting carrots to the balcony or in a cool room.

Put in a preheated oven and prepare for 20-25 minutes. The finished cake for a roll with carrots and cheese becomes moderately elastic and a little more dark.

Tip: If the cheese is not salty, add salt to taste. My cheese is already quite salty.
