Transfer purified berries into a deep bowl or pan for cooking, fill in sugar.
The amount of sugar can be slightly varied, but you should not greatly reduce its amount — sugar not only makes jelly, but also preserves.

Gently mix strawberries with sugar, trying not to damage the berries. Leave for 6-7 hours at room temperature — the juice will be released during this time. This is the basis, without which real strawberry jelly will not work.

Prepare the container while the berries are insisted. I use two jars of volume each 330 g.
Wash banks and lids thoroughly with soda or dishes. Run with running cold water. Then sterilize. I like to sterilize banks in a steam bath. Pour water into the pan, bring to a boil. Dip the lids into boiling water. On top, install a special grill or sieve, on which put the jars down. Boil for 10-15 minutes so that the pair processes the entire inner surface.
The lids can be boiled in a separate bowl for 5 minutes. After sterilization, leave the jar on a clean towel, a neck down.

After the indicated time, the berries let the juice. The amount of juice depends on the juiciness of strawberries. At this stage, the berries are already ready for cooking.

Transfer the strawberry mass to the pan. Put a pan on medium heat and bring to a boil, stirring carefully.
It is better to use enameled or stainless dishes with a thick bottom. It heats up evenly and does not allow the berries to burn.

Dvivatin pour cold boiled water. Mix. Leave for 10-15 minutes to swell gelatin.
You can not use boiling water, since gelatin can lose its zheling properties.

Warm the swollen gelatin in the microwave in small pulses of 10-15 seconds. After each warming, mix well. The gelatin mass should not boil.

Berries boil on the smallest heat for 8-10 minutes. Stir constantly so that the strawberries warm up evenly, and the sugar completely dissolves.

Remove the pan from the heat, let the mass cool slightly (5-7 minutes), then add the dissolved gelatin.

Mix well so that the gelatin is evenly distributed throughout the syrup.

Pour the hot jelly of strawberries with gelatin in sterilized jars, filling almost to the edges.

Close tightly tightly with lids. Turn the banks upside down. This will help to check the tightness and additionally sterilize the lid. Leave until completely cooled, without wrapping.
After complete cooling, remove them in a cool, dark place: a pantry, basement or lower shelf of the refrigerator. The ideal storage temperature is from +4 to +12 ° C. In such conditions, the jelly is calmly stored until spring, preserving the taste and texture.
