  • Prepare all ingredients for pea soup with chicken and potatoes.

    Vegetables for soup are sautéed in butter. To prevent it from burning, just don’t make it too hot. Sautéing makes vegetables more aromatic, they are imbued with a creamy taste, and we don’t need fried crusts.

  • Step 3

    Place the ham and peas in a saucepan and add a liter of water. Put on fire.

    I always remove the skin from the legs. Here it is as you wish. Store-bought chicken. Something is always accumulating in the skin (antibiotics, etc.). Well, we reduce calories and fat. This is so subjective that I am in no way persuading you, but voicing my position. Sometimes I leave this same skin on domestic chicken.

    After boiling, skim off any foam that has formed.

    Reduce heat, add salt, celery and cook for 30-40 minutes.

    Salt is subjective! I weighed out all the added salt during the process and got 17 grams. Add 10 (half a tablespoon), and then towards the end of cooking, add additionally, if necessary.

    I add green celery leaves to the parsley.

    If you want the peas not to lose their shape, then first cook the chicken for 15 minutes, and then add the peas. All this applies to split peas. Add the whole one right away.

  • Step 6

    Chop the leeks, carrots and mince the garlic.

    Onion in half rings. My carrots are grated into thin strips. And, as always, I put the garlic through a press.

  • Step 7

    Sauté the onions and carrots in butter and add the garlic at the end.

    Fire is medium. The time is about 4-5 minutes.

  • Step 8

    Peel and cut the potatoes into fairly small cubes and chop the herbs.

  • Step 9

    Select the chicken and add half a liter of water, potatoes, sauté, green peas and pepper to the pan. Cook for 10 minutes.

  • Step 10

    Remove the chicken meat from the bone and chop into small pieces.

  • Step 11

    Add chicken, smoked paprika and herbs to the pan. Taste for salt and cook for another 2 minutes.

  • Step 12

    Turn off and taste the soup again for all seasonings.

    During this time, my split peas were almost boiled, but still slightly retained their shape. We love exactly this consistency: quite thick and without any crunching.

    If the soup is not eaten immediately, then over time it turns into a kind of pea porridge. Please take this into account. Either you dilute it with additional broth, or you don’t pay attention to it and eat it as a creamy porridge. It's delicious!
