Prepare ingredients for cooking beaten eggplants with minced meat and cheese.
For baking, choose ripe, dense and fleshy eggplants of the same size.
You can use any minced meat in the recipe. You can take a mixture of beef and pork, it gives juiciness and richness of taste.
Bryndza can be replaced with feta, the filling will be a little more tender and milder in taste.

First of all, prepare the eggplants. Wash the eggplants, dry them and roll each eggplant with a rolling pin or lightly beat them so that the skin remains intact and the inside becomes softer.

Cut each eggplant lengthwise, making an incision not all the way through, open them like boats, forming a pocket.
Place the eggplants in the pan, drizzle with oil and place in the oven at 200°C for 20 — 25 minutes until they are soft but retain their shape. Bake until half cooked.
Tip: Eggplants absorb too much oil, so there is no need to grease them before the first baking, just a few drops on top.

While the beaten eggplants are in the oven, prepare the filling.
Finely chop the onion and place in a frying pan with vegetable oil. Fry until transparent.

Add minced meat to the onion in the pan.

Cook the minced meat until golden brown, breaking up any meat lumps. Add chopped garlic, season with salt and pepper.

Next, add quartered cherry tomatoes and chopped parsley to the minced meat.

Then add cheese, tomato paste and thyme.
It is better to break the cheese with your hands or cut it into large pieces; large cubes are better felt in the filling.

Mix all the filling ingredients thoroughly and let heat in the pan. Make sure the filling remains juicy. If necessary, add a little water or broth.

Remove the eggplants from the oven and cool slightly. They will be almost hollow inside due to beating.
Fill the eggplant boats with warm filling, placing them in the pocket quite tightly and heaping.

Cover the pan with foil and return the stuffed eggplants with minced meat and cheese to the oven. Bake at 180°C for about 15-20 minutes until the top is lightly browned and the flavors of the vegetables and cheese have melded together.

5 minutes before cooking, remove the foil and grate the eggplants with Parmesan or other grated cheese of your choice. You can turn on the grill or convection mode for golden browning.

Broken eggplants with minced meat and cheese are ready in the oven. Sprinkle with fresh herbs, pomegranate seeds or cranberries and serve warm, or directly in a casserole dish.
