We had no pies for a long time)
Today we will prepare a very tasty version of a plum cake with a lemon note and a stunned sprinkle of caramelized almonds.
In addition to 200 gr. ordinary flour is 50 g. almond, however, for lack of the latter, you can safely take 250 gr. Wheat — nothing terrible will happen).
Product set:
- Wheat flour, 200 gr.
- Sugar, 200 gr.
- Plums s/m. 200 gr.
- Milk, 100 ml
- Lemon, 1 pc.
- Egg, 1 pc.
- Almond flour, 50 gr.
- Butter, 30 gr.
- Almond flakes, 20 gr.
- Baking powder, 8 gr.
- Vanilla sugar, 5 gr.
- Salt
We remove the zest from the lemon, squeeze the juice. We thoroughly soften the butter. We cut plums in half, if large, then quarters.
We put a couple of spoons of wheat flour to the side, mix the rest with almond, baking powder and a pinch of salt.
Separately mix milk, 2/3 of butter, lemon zest, lemon juice, ordinary sugar, egg and beat with a mixer for a minute.
Add the flour mixture, continue to work with a mixer for a couple of minutes, bringing the dough to uniform.
We grease the bottom of the shape with vegetable oil, sprinkle with the layered flour, shake off the excess, pour half the dough, lay out the plums, pour the remaining dough, level it and send the oven in the oven for 40 minutes.
In a pan, we melt the remaining butter, add vanilla sugar, almond flakes and fry for a couple of minutes over medium heat, constantly stirring.
Sprinkle the finished cake with sweet flakes and serve.
