Detailed step-by-step recipe with photos: Step 1
-
Prepare the ingredients: semolina, kefir of any fat content. My kefir is quite thick and has grains, but the consistency doesn’t really matter. You can also use any apples you like. True, sour varieties of sugar may require a little more.
Tip: the indicated amount of sugar can be reduced by 50 g or increased if you like very sweet pies.
I use vanilla sugar with added vanilla beans and natural yellow coloring. Instead, you can use regular vanillin, vanilla extract or vanilla paste.
These 1st category eggs can be replaced with 2 selected category eggs. By the way, instead of apples, you can use dense pears, quinces or plums for a very tasty kefir manna. And in the summer — peaches and nectarines, it turns out just as tasty.
-
Step 2
Pour kefir over the semolina and mix thoroughly so that there are no dry fragments.

Step 3
Core the apples and cut into quarters, then into thin slices.
Tip: To prevent apples from browning, sprinkle them with lemon juice and stir. You can cover with a bag while you make the dough.

Step 4
In a deep bowl, combine eggs, sugar, vanilla sugar and salt. Beat into a dense mass that will increase in volume. First beat at medium speed for about 2 minutes, then at maximum speed for another 3-4 minutes.
-
Step 5
Turn on the oven at 200 degrees. Add the swollen semolina to the eggs and mix again with a mixer at low speed for about 1 minute.
-
Step 6
Add baking powder and stir for 20-30 seconds.
-
Step 7
Place the apples into the batter and stir with a spatula until each piece is coated.
-
Step 8
Pour the dough into a mold with a removable bottom. I use a diameter of 24 cm. You can use a pastry ring, like mine, securing 1-2 layers of foil at the bottom. It’s convenient to immediately place the ring with foil on a baking sheet so that you don’t have to move it.
Important: use high-density foil or make 3-4 layers so that it does not tear.
-
Step 9
Place the delicious manna with apples on kefir in a well-heated oven and bake for 25-30 minutes, covering the top with foil, at 190-200 degrees. Then remove the foil and bake for another 15-20 minutes.
-
Step 10
The finished, delicious manna with apples on kefir needs to be cooled for 15-20 minutes. Then remove the ring and cool completely. Cover with a larger plate.
Important: hot semolina will be unstable and will begin to crumble and break when cut.
