Turkey noodle soup

  • Prepare the ingredients. Choose turkey meat on the bone (drumstick, wings or a quarter of the carcass) or breast (if you want something more dietary), prepare carrots, potatoes, onions, vermicelli (preferably small ones), a couple of sprigs of dill or parsley, bay leaf, black pepper, turmeric (if desired, it gives a beautiful yellowish tint to the broth) and salt to taste.

  • Step 2

    Rinse the turkey and cut into small pieces.

    For soup, choose a chilled turkey breast that is pale pink in color, has a uniform structure, without extra veins, odor or liquid, and is firm and fresh. The fresher the breast, the cleaner and softer the broth will be.

  • Step 3

    Peel the carrots and grate or cut into circles/bars, peel the onion and cut into cubes.

  • Step 4

    Pour water into a 3 liter saucepan (2 liters) and put on high heat/power (9 for induction), wait until the water boils. Reduce heat to medium/high (5-6 for induction) and transfer turkey meat to pan. Bring to a boil, remove the foam with a slotted spoon, reduce the heat to a low boil (2-3 for induction) and cook the meat for 20 minutes.

    While the meat is cooking, fry it. Pour vegetable oil into a heated frying pan (you can use butter) and fry the vegetables over medium heat/power (about 5-7 minutes) until the onions are transparent and the carrots are soft.

  • Step 6

    Peel the potatoes and cut into cubes.

  • Step 7

    Add potatoes to the soup, cook until soft, about 15-20 minutes (depending on the type of potato and the size of the pieces) over low heat/power (2-3 for induction).

  • Step 8

    Season with salt and pepper to taste, add turmeric and add bay leaf.

  • Step 9

    After the potatoes are cooked, add vermicelli. Stir well and simmer the turkey soup on low heat/high for 10 minutes.

  • Step 10

    Add the prepared fried noodles to the soup and cook everything together.

  • Step 11

    Stir the soup well.

  • Step 12

    Add chopped dill or parsley. Turn off the heat and let the turkey noodle soup simmer, covered, for another 10 minutes.

  • Step 13

    Pour the turkey noodle soup into bowls and serve. Bon appetit!
