Prepare the ingredients. The most important thing in meatballs is delicious minced meat. I use pork and beef 1 to 1. You can use all beef or add a little red chicken meat. Leeks can be replaced with onions, white or even red onions.
Tip: instead of broth, plain water will do; the liquid is needed to dilute the tomato paste.
As the base of the sauce, I use seedless and frozen summer tomatoes, crushed in a blender. You can use store-bought ones — just remove the seeds and chop in the same way.
Celery adds a spicy note to the sauce, but it's optional here. And Italian herbs can be replaced with oregano, herbes de Provence or just basil. The amount of sugar may be needed more or less — it all depends on the acidity of the tomatoes.

Prepare the minced meat: add salt, black pepper and half the dried herbs. Mix thoroughly and beat a little in a bowl to compact.
Turn on the oven at 200-210 degrees while you make minced meat.

Step 3
Form meatballs and place them at a distance from each other. I take 30-33 g of minced meat. I use 2 molds approximately 32 x 22 cm in size. You can prepare half a portion of 500 g of minced meat, then 1 mold is enough.
Tip: you can pack the meatballs more tightly and pour all the sauce on top of them, but you will have to evaporate it more so that there is a little less.
Place the pan with meatballs in the oven for 15-20 minutes.

Finely chop the celery and leeks.

Heat olive oil in a frying pan and add celery there for 3-4 minutes. Fry over high heat.

Add leeks, fry for another 2-3 minutes and squeeze out garlic. Stirring, fry for 1 minute.

Add tomato paste and heat for about 1 minute.

Pour in the broth, chopped or pureed tomatoes and stir.

Add the rest of the dried herbs and place on the stove. Bring to a boil over low heat and cook for 10 minutes, uncovered, to allow the moisture to evaporate. Add sugar as needed if the sauce is sour. If you cook in 1 form, then evaporate for 15 minutes.

Take out the meatballs; they should be slightly browned and have changed color.

Pour the prepared sauce over the meatballs.
Important: if you cook in 2 forms, fill with half the sauce and leave the other.

Return the meatballs to the oven and cook for another 15-20 minutes. Then prepare the second batch in the same way.

Meatballs in tomato sauce are ready in the oven. Serve hot with your favorite side dish.
