To prepare a delicate and juicy biscuit roll, we will need the following ingredients: apples, chicken eggs, granulated sugar, wheat flour, butter and ground cinnamon.

For the filling, clean and rub apples on a coarse grater. I took four large fruits and resulting in 600 grams of grated pulp.

We turn on the oven (180 degrees, lower and upper heating) and engage in biscuit test. In the dishes for whipping we break chicken eggs (4 pieces of 50-55 grams each) and pour sugar (100 grams).

Beat with a mixer at high speed until the sugar is completely dissolved and a strong increase in the mixture in volume. My planetary mixer copes in about 15 minutes (this is the maximum).

Well-beaten eggs with sugar should leave behind a trace that does not spread for 3-5 seconds.

Sift wheat flour (100 grams). If you are not friends with biscuit dough or are not confident in your abilities, you can also pour half a teaspoon of baking powder. True, with proper preparation (in particular, well -beaten eggs) there should be no problems.

Introduce flour with a spatula with folding movements. Sometimes I just quickly interfere with the same whisk, only manually.

It's time to collect a future apple roll. We cover the baking sheet with high -quality parchment and grease with soft butter (1 tablespoon).

Evenly distribute the filling of grated apples. First, I shift it with a spoon, and then I led it with my palm.

We put a biscuit dough on top. You see, with proper and long beat, it is stable, holds its shape and does not spread.

Using a shoulder blade or spatula, we level the biscuit dough, trying to make it the same thickness.

Bake a biscuit roll with apple filling in the oven preheated to 180 degrees at an average level. My oven is electric, lower and upper heating (convection is not needed). Such a roll is prepared quite quickly — about 20 minutes. Check if the biscuit is well baked, you can press the finger (it spring, and does not fail) or with the help of a wooden toothpick (it comes out of the dough completely dry).

We take out a baking sheet from the oven, cover the hot biscuit with a kitchen towel (second cutting of parchment paper) and place a second baking sheet or a large cutting board on top. We turn the structure, remove the baking sheet on which the workpiece was baked. As a result, the filling turns out to be from above, and the biscuit is under it.

We remove the parchment.

We turn the biscuit with apple filling, starting from the narrow side. Then I just turned it 90 degrees so that the roll would fit into the frame. You can cool the baking right like that, but it is better to wrap it in a thick kitchen towel. It is very delicate and easily deformed, spreading in breadth. And in a towel, it will perfectly retain a rounded shape.

Cut a biscuit roll with apples, prepared according to this recipe in the oven, you can even warm. True, for me it is the tastes the most cold (after a few hours spent in the refrigerator).
