If there is a whole carcass, it is convenient to use it: cut and leave the breast for soup, and the rest is for other dishes. I like to take a whole carcass of chicken, because it is economically more profitable, especially if you need to cook soup. The skin can be removed — so the soup will be less oily. Chicken breast on bones or soup set (for example, wings or back) is also perfect.

Cut chicken in small pieces. Or you can leave it entirely and cut it already when it is cooked and returned to the soup again.

Put the broth to cook. Put chicken bones and breasts in a pan, pour cold water, bring to a boil. Remove the foam after it appears, salt, add bay leaf. Cook on low heat for 20-25 minutes. In order for the broth to be transparent, not to allow strong boiling — to cook on very low heat.

Rinse celery and cut into small slices.

Heat the oil in a pan.
Fry celery until soft or golden shade. About 5 minutes over a moderate heat.

Clean carrots. Cut it with circles or straws. You can also grate on a coarse grater.

Add carrots to celery. Cook another 5-7 minutes.

Prepare potatoes for soup with celery and chicken.
Peel it and cut it with small cubes.

After the chicken boils, remove it, cut it into pieces (if it was entirely), return to the pan. Pour potatoes, cook 10 minutes over low heat. Then add fried vegetables with celery to the pan. Cook another 10-15 minutes until the potatoes become soft.
Add salt and pepper to taste. If desired, you can drip a little lemon juice — it will emphasize the taste of celery. Try to taste soup.

Pour the soup with celery with stem and chicken on plates, sprinkle at the request of chopped herbs.
Leave the soup on the stove and let it cool completely to room temperature. Do not put hot soup immediately in the refrigerator so as not to spoil other products and not create excess moisture. Store the soup in the refrigerator for no more than 3 days at a temperature of 0–5 ° C. Soup can be frozen. To do this, pour it into suitable containers for freezing. Sign the date. Remove in the freezer. Store up to 2 months.
