Prepare ingredients for yeast-free apple pie.
I have the weight of whole apples, with the core, which we will cut out later.
If you don't like cinnamon, don't add it. But apples and cinnamon are a classic in my opinion!
From the total amount of flour, take about a level tablespoon onto the dust of the table for rolling out the dough.
80 grams of sugar in the dough, and 20 for apples.
I use low-fat sour cream, 20%.
Butter is soft.
The diameter of the bottom of the mold is 22 cm.

Shake 2 eggs. Set aside about a tablespoon for brushing the top of the pie.

Mix sour cream, a pinch of salt and 80 grams of sugar into the eggs.
Mix well. Let the sugar begin to dissolve.

Mix wheat flour (1 tablespoon set aside), baking powder and soft butter until crumbly.
I do all this using a mixer.
By the way, to prevent the flour from flying in all directions at the very beginning of mixing, I lightly cover the bowl with a kitchen towel.

Pour the sour cream and egg mixture into the crumbs.

Knead into a soft, almost non-sticky dough.
Mix quickly. I start mixing with a mixer, and when it gets hard, I quickly gather the dough into a ball with my hands.
Cover and refrigerate.

Core the apples, cut into slices, sprinkle with sugar, cinnamon and mix well.

After about 20 minutes, separate 80% of the dough and roll it into a circle with a diameter of about 25-28 cm.
If necessary, dust the surface with flour.
The remaining dough will go on top of the pie.

Transfer the dough into the mold and form the sides. Sprinkle the surface with starch.
I have a Teflon mold with a removable bottom. And although it is believed that shortbread dough does not stick to this form, to be on the safe side, I still line the bottom with baking paper.
Turn on the oven at 180 degrees.

Roll out the remaining dough into a thin layer and cut into a lattice using a special roller cutter.
It is not necessary to make the top exactly like this. You can cut strips and make a lattice. Or you can cut out figures — leaves, etc. and simply put it on top. I just bought this gadget and needed to try it out urgently 🙂

Transfer using a rolling pin.

Fill the mold well and tightly with apple slices.

Cover the pie with a lattice of pastry and brush with egg.
I cut off the excess and make a couple of cookies, which are baked next to the pie. Or you can cut out some leaves and lay them on top of the lattice.

Bake the yeast-free apple pie in the oven for about 35-40 minutes. Let it sit for a little bit, about 10 minutes, and take it out of the mold.
As you can see, I didn’t grease the mold, the edges are intact, they came off perfectly, and the removable bottom is a real treat. Very convenient.
