Prepare ingredients: defrost the fillet in advance, but not completely. Slightly frozen fillets are easier to cut lengthwise for turning. You should choose medium or large-sized breasts, since small ones are not very convenient to roll into rolls. From 2 medium-sized fillets you get no more than 5 chicken skewers with bacon if you string 3 “rings”.
It is better to take bacon in the form of slices — it has the same thickness and very thin slices. Boiled-smoked or raw-smoked – it doesn’t play a special role, choose according to your taste.
The sauce should not be very liquid. Instead of tomato sauce, you can use pasta. If you use homemade tomato sauce like I do, remove it with a slotted spoon or strain it into a very fine sieve to remove some of the excess liquid.
Garlic, salt and pepper should be added to taste. My sauce has plenty of them, plus the bacon itself is very salty. Since the dish is served with sauces, you don’t need to add salt at all.

Cut the chicken fillet in half lengthwise, but not all the way through. Then unfold it and place it cut side up.
Tip: small fillets can be cut and placed on the thinnest part of the piece.

Beat the unfolded fillet, paying special attention to the densest and thickest part. It is better not to touch thin edges.

Brush the spread with tomato sauce. If you use pasta, then first season the fillet with salt and pepper, and mix the paste with chopped garlic.

Lay out the bacon slightly overlapping: the long part of the strips should lie in the direction of curl.

Wrap the roll tightly, helping with your fingers and holding the bacon inside so that it does not crawl out.

Cut the roll into chicken skewers with bacon — the thickness of the pieces should be 2-3 cm.

Place the skewers on bamboo skewers, piercing in the center to catch the folded edge and the bacon inside.
Tip: focus on the size of the frying pan; if necessary, the skewers can be cut to the desired length. It is better to take the largest frying pan.

Heat vegetable oil over high heat. Use enough oil to completely cover the bottom with a layer of about 0.5 cm.
Place the chicken skewers with bacon not too tightly together, reduce the heat to medium-high (4/6 for an electric stove) and fry for 5-6 minutes.

Flip the skewers over the edges of the skewers and fry for another 5-6 minutes. If the meat begins to brown quickly, reduce the power to medium.

Transfer the finished chicken kebabs to paper towels to remove excess oil. For 3-4 minutes.
Tip: you can fry the second batch in the same oil, removing pieces of meat from it if anything has flaked off.
