Tip: it is better to fry in refined sunflower oil, but olive Extra Virgin is not at all suitable for potatoes.
Also, for fried potatoes with bacon, you can take refined grape seed oil or coconut. Instead of onions, white, pranks, tears or red (purple) are suitable.

Cut the quarters with slices or cubes with a thickness of 5-7 mm.

Rinse potatoes with water and dry using waffle or paper towels.

Cut the onion into pieces, cubes or a quarter rings.

Cut the bacon in large pieces — when frying, they will greatly decrease in size. If you use thin cuts with long stripes, then separate the pieces from each other for effective frying.

Heat the pan, add 2-3 tbsp. l. vegetable oil from the total. Put the bacon and fry over medium heat. When the fat melts a little, increase the power to maximum and fry 2-3 minutes. Focus on the color of the bacon, it should be browned, but not burn.

Add onions to bacon, mix and fry over high heat for about 5-7 minutes. The onion should become golden, translucent.

Put the finished frying into a separate bowl. If at the bottom of the pans there are burnt pieces, remove them with a paper towel.

Pour the remaining vegetable oil and heat. Put the potatoes and put on strong fire. Fry 5 minutes without mixing.
Important: if the potatoes constantly interfere, a beautiful crust does not form.

After 5 minutes, mix the potatoes for the first time, trying to ensure that the bottom layer is upstairs. I use a pan with a lid diameter of 28 cm, the potato lies in 2 layers.
After the first mixing, fry for another 5-6 minutes.

Mix potatoes for the second time and fry for another 5-6 minutes.
Important: if the potatoes are fried in a smaller layer, then it will take less time for cooking, and after 2 mixing you can add a bacon.

Put the bacon with onions on top and mix for the third time. Fry for 3-4 minutes, mix so that nothing is buried.

Try a potato fried in a pan with bacon for readiness. Most likely, even the lightest piece will already be ready. If the potatoes seem solid, fry for another 3-4 minutes.
