Preparation: Step 1

Prepare all the necessary ingredients for vegetable stews with chicken. Rinse vegetables well under running water. Heat the pan over medium heat, pour in 1-2 tbsp. l. vegetable oil. When the oil warms up well, lay out the chicken and fry for 6-8 minutes, stirring periodically. The pieces should be slightly browned, become golden from the outside, but not dry out.

While the chicken is fried, peel onions. Cut it with small cubes so that it is prepared faster and evenly distributed throughout the stew with chicken and vegetables.

Add onions to chicken, fry together for 3-4 minutes until soft. It should become transparent and slightly caramel — so a sweet, warm basis of taste will appear in the dish.

Wash the bell pepper, remove the seeds and partitions, cut into strips or large cubes — as you want. Red or yellow pepper will make the dish brighter and more aromatic, and the green will give a light spicy bitterness.

Wash the zucchini, if necessary, peel and seeds. Young zucchini can not be cleaned — they have a soft peel and there are practically no seeds. Cut into cubes like potatoes — it will be more uniform in a finished vegetable stew with chicken in a pan.
