Preparation: Step 1

Prepare all ingredients for cutlets with gravy in a pan.
I use pork minced meat, which I scrolled from the neck itself. It is fat, juicy — what is needed. If possible, make minced meat at home — a purchased minced meat is often poor -quality and does not give the desired texture.
You will need 2 tablespoons of sour cream — one will go to minced meat, the other in the gravy.
Onions — 2 pieces: one in minced meat, the second — in the sauce.
Carrots — about 100 g.
Bulbs — 120 g. -
Step 2
Put 1 onion in the blender bowl (cut into 4–6 parts), add a pair of garlic cloves, pour 50 ml of water and grind everything to gruel. So the minced meat will turn out more aromatic, and cutlets without eggs will be juicy and soft.

Add panning crackers, sour cream, onion-shock mixture, a pinch of marjoran, salt and pepper to a bowl with minced meat. Mayran perfectly complements the taste of home cutlets, making them a little spicy, but without interrupting the meat taste.

Carefully knead the minced meat with your hands. Leaving him a little about the bottom of the bowl — this is necessary to remove excess air. Thanks to this, cutlets in a pan do not fall apart and keep their shape even without eggs.

Form small cutlets of the desired size. I got 8 pieces of 100–110 g. The form is oval, flat, to be fried well.

Add a couple of spoons of oil to a preheated pan. Put cutlets.
I do not collapse in anything. But if you want it, please. It can be flour and breadcrumbs.

Fry cutlets on both sides, to beautiful blunders.

In the meantime, finely chop the second head of the bow and grate the carrots.

Remove cutlets on a plate. Fry the bow in the same pan first, add carrots after 2-3 minutes, and after another 2 minutes — 1 tsp. tomato paste. Fry everything together for another minute.
💡 Advice: If the pasta is acidic, I recommend adding a pinch of sugar — the gravy for the cutlets will be more balanced.

Pour the remaining 250 grams of water, sour cream, salt, pepper into the pan. Stir and lay out cutlets on top.
Stew all about 10 minutes. For small cutlets of this time, there is enough for the eyes, and for fried vegetables and even more so.

By and large, everything is ready and can be served.
But, if there is a desire, then you can make a more homogeneous gravy, giving it a density.
To do this, the cutlets must be removed, and the rest is poured into a bowl and chopped with a submersible blender.
The taste of the fill will depend on the vegetables that you will use. For example, the proposed is simple and understandable. Carrots dominate here rather. I like to add pumpkin, sometimes Bulgarian pepper, tsukini or zucchini. In general, there is a flight of fantasy, and taste preferences, and the contents of the refrigerator 🙂
