Preparation: Step 1

  • Prepare all the ingredients for the preparation of boiled beef.

    Almost always and everywhere I use a mixture of different peppers. If not, there is enough simple black and fragrant pepper. The latter is no more than three pieces.

    When cooking meat, you can also add greens, parsley root. The celery stalk can also be replaced with the root. Rosemary, thyme, a couple of juniper berries — all this is suitable for beef.

  • Step 2

    Clean carrots, garlic cloves and onions.

    The onion can be cut into two halves or left whole. I cut carrots and celery if they do not fit into the pan.

  • Step 3

    Bring the water to a boil and lower the beef into it.

    When the water again begins to boil, carefully remove the formed foam.

    I take a small pan. In order for the water to cover the meat, about 600 grams of water was enough for me.

  • Step 4

    As soon as the foam stopped standing out, add vegetables, garlic, peppercorns and bay leaf.

    I always put salt closer to the end of cooking. Habit. It is believed that the addition of salt at the end gives the meat to remain a little more juicy. I’m not sure of this, because I didn’t notice any special changes, but the habit is a great thing 🙂

  • Step 5

    Close the pan with a lid, make a minimum fire and leave the meat to boil weakly. Somewhere in an hour, add salt and continue cooking. Cook until soft.

    Time depends on the size of the piece, part of the beef, its «youth». I have, although small pieces, but all two hours were cooked.


    How to freeze the broth



  • Step 6

    As soon as the beef becomes soft and the fork enters it freely into it — you can turn it off.

  • Step 7

    Everything, the boiled beef is ready.

    Both meat and the resulting broth can be frozen. Well, or if you planned the soup, then here you have ready broth. Yes, and the meat can also be added there, for satisfying.

    It is quite possible to make a cream sauce to boiled beef and serve with potato mashed potatoes. I just throw options and ideas 🙂 everyone is pleasant to appetite!
