Prepare all the ingredients for the preparation of udon with vegetables.
Lapsu Udon and Teriyaki sauce can be bought in departments with Asian goods.
I chose the most beloved vegetables, but they can be changed based on your tastes.

Prepare vegetables for udon. This must be done before proceeding with the preparation of the dish, since everything is prepared very quickly.
Peel the onion and cut with feathers. I like to use red sweet onion, but you can take ordinary onions.

Clean ginger root from the peel and cut into small cubes.

Clean the carrots and cut it with long strips.

Rinse a young zucchini. Delete the ends. Cut with the skin with long bar. It is not necessary to chop the zucchini very finely. It is preparing quickly, and it is important that it remains intact.

Remove the middle from the Bulgarian sweet pepper along with the seeds. Cut the pepper into pieces and then, cut each piece with long identical stripes.

Prepare a convenient frying pan for udon with vegetables.
Pour vegetable oil without smell into the pan and heat it over medium heat. Add chopped ginger and onion.

Fry the bow with ginger for about 2 minutes with periodic stiring over medium heat.

Add carrots, bell pepper and zucchini to the pan.

Fry the vegetables for about 3 minutes. They should not prepare completely.

Prepare parallel to the udon. To do this, boil a large amount of water, slightly salmon and put noodles in boiling water.

Prepare noodles according to the specified time on the package. In my case, the noodles were prepared for 5 minutes after boiling water. Drain all water from the finished noodles.

Transfer hot noodles of Udon to a pan with vegetables and add teriyaki sauce.

Mix noodles with vegetables and teriyaki. Cook over medium heat for about 2 minutes.

Turn off the fire and pour the ready -made udon with the juice of half the lime, sprinkle everything with sesame seeds.

Udon with vegetables is ready. Serve noodles at once while the dish is even hotter.
