For the preparation of cottage cheese balls, we need the following products: wheat flour (I have the highest grade, but the first or their mixture is suitable), cottage cheese of any fat content (I use 5%), chicken eggs of medium size (45-50 grams each), powdered soda and a little salt to balance the taste. In addition, for frying, take a refined vegetable oil — in my case sunflower.

First, we sift 250 grams of wheat flour into a separate dish, which we mix in advance with half a teaspoon of baking soda and a pinch of fine salt.

Then, in another bowl (in which you will knead the dough), connect a pair of chicken eggs and 100 grams of sugar. If you wish, you can make future curd balls more fragrant by adding a pinch of vanillin at this stage or replacing a 1 tablespoon of sugar with vanilla sugar. I did not add, as I sprinkled the finished balls with vanilla powder (I just chopped a tablespoon of homemade vanilla sugar in a coffee grinder).

Beat the eggs with sugar with a mixer or a whisk, until the mass turns white, it will increase in volume, and sweet crystals will not completely dissolve. After that, add 250 grams of cottage cheese to the mixture. The amount of wheat flour depends on its consistency — the dry the cottage cheese, the less flour needs.

Once again, we beat everything well so that cottage cheese unites with egg mass as best as possible. It happens that cottage cheese with large grains, then it is advisable to wipe it through a sieve in advance, otherwise these grains will become tough in the finished balls and will be felt.

Add a dry mixture from step 2 and quickly mix everything.

Literally in a minute, all products will connect and it will turn out to be soft, delicate and almost not sticky dough. If the dough is very sticking to your hands, add a little more flour (it depends on its humidity and consistency of cottage cheese).

Let us give the dough for about 5 minutes to lie down, and in the meantime we will prepare everything for frying blanks. To do this, it is best to choose some deep and fairly narrow dishes to reduce the consumption of oil for the deep fat to a minimum. Pour vegetable oil without smell into a saucepan or saucepan, warm it well. The oils should be enough so that future cottage cheese donuts do not lie at the bottom of the dishes, but swim freely in it.

While the oil is heating, divide the dough into small pieces of the same size and roll each into the ball — no more than a walnut. If you love everything perfect, weigh pieces of dough — I have everything almost 18 grams. Since the dough sticks a little, when molding, you can slightly moisturize your hands with water.

The oil warmed up — ideally, it is believed that it is best up to 160 degrees, but I warm a little less. Honestly, I am not particularly strong in the intricacies of cooking in fruit, but I can definitely say one thing. If the oil is not enough to warm up, flour blanks absorb it too much, and when overheating, the brown balls will burn, and inside the crumb will remain raw (not a fact, of course, but quite possible). We put several blanks in hot oil (so that they swim freely and do not come into contact with each other) and fry over medium heat.

Cottage cheese balls are instantly swollen and rounded. Do not leave the stove — the process occurs quickly and requires your constant presence. By the way, you do not need to turn them over — the koloboks themselves rotate freely in oil, evenly blinking from all sides. But this happens only if you do not regret the oil.

We take out the finished cottage cheese balls from the oil with a slotted spoon and shift to a flat dish. I advise you to cover the dishes with paper napkins that absorb excess oil.
