PP recipe for coconut cookies with step -by -step photos
Prepare all ingredients for coconut cookies.
Get food from the refrigerator in advance so that they become room temperature. Soft cottage cheese can be replaced with a briquette.

Put the soft cottage cheese in a bowl. Gently break one egg into a curd mass. Mix with a fork or whisk until smooth.
If you use granular, wipe it through a sieve or beat it with a blender to get a smooth mass.

Pour coconut chips. To interfere with parts so that the mixture does not become too dry. Here you need to monitor the texture: the mass should remain slightly moist, but keep the shape.

Step 4
Introduce flour, previously sifted through a sieve, along with a baking powder. Add vanillin. Sprinkle with a pinch of salt for the balance of taste. Mix well again until a homogeneous mass. The dough for PP cookies will turn out to be viscous and slightly sticky.
If necessary, add the sweetener — for example, eryritic or stevia. Keep in mind that the coconut itself is sweet, so there will be very little sweetener.

Form coconut cookies. To do this, wet a little hands with water, take 1 tablespoon of mass, roll the ball and slightly sleep. Or roll out a large sausage and cut into equal parts. Put the blankets on a baking sheet at a distance of 2-3 cm from each other.
Turn on the oven: warm it up to 180 ° C, set the grille to the average level. Cover the baking sheet with parchment. Put the pp cookies in the preheated oven and bake for 20–25 minutes, until the bottom and edges become golden. It is important to monitor the process so as not to dry.

Step 6
Remove coconut cookies from the oven. Leave for 5 minutes on a hot baking sheet, then transfer to the grate until it cools completely.
Immediately after the oven, the cookies will be very soft, but as it cools it, it will become denser.

Put the finished PP coconut cookies on a plate. You can slightly dip it in dark chocolate without sugar — it will be even tastier.
Such coconut cookies is fragrant, with a delicate middle and crispy crust. Perfectly suitable as healthy cookies for tea, for morning coffee or on the road. This is a light pp dessert that will please both adults and children. Keep homemade cookies in the container in the refrigerator — it remains delicious for several days.
