Prepare the ingredients: remove the eggs from the refrigerator in advance, and you can take the butter and milk right before cooking. Oil with a fat content of 72.5% is suitable, but if you do not want to use vanilla flavored additives, take 83% to have a pronounced creamy aroma.
Important: milk is suitable for any fat content, I use 3.2%.
I do not recommend replacing baking powder with soda in this recipe — an unpleasant aftertaste may appear. But you can’t remove the salt – it gives sweet dishes a pleasant, enhanced and contrasting taste.
Vanilla paste can be replaced with vanilla extract, sugar with added natural vanilla, or regular vanilla. The main thing is that it has a good taste, since for some manufacturers the product loses its flavor during heat treatment.
Another important ingredient for soft Viennese waffles in an electric waffle iron is flour. I do not recommend replacing it with other types in this recipe; the waffles will not turn out as soft, tender and crispy.

Melt the butter over low heat (2/6 for an electric stove). Can be melted in the microwave. Then it should be cooled a little so that it is no more than 40-45 degrees. Also slightly warm the milk to body temperature.

While the oil cools, prepare the liquid base. Mix eggs with sugar in a deep mixing bowl. At the same stage, you can add vanillin or vanilla paste.

Beat until fluffy white mass — at least 5 minutes at maximum mixer speed.

Pour in the heated milk and melted butter, mix again at medium speed for about 30 seconds.

Combine flour, salt and baking powder using a whisk.

Add ingredients to liquid base.

Mix at low mixer speed until the ingredients combine — no longer than 1 minute. The dough turns out quite liquid, a little thicker than for pancakes.

Turn on the electric waffle iron and grease the panels with a small amount of vegetable oil.
Tip: if your waffle iron has a temperature controller and the power of the device exceeds 1500 W, read the instructions and set the appropriate mode. Usually — slightly above average, but below the maximum, for example, 6 out of 8 or 4 out of 6.

Pour approximately 60-70 ml of dough onto a well-heated panel, or 2/3 of a standard 100 ml half.
Important: I use a small ladle with a capacity of 50 ml, but the dough is poured onto it with a good heap.

Close the waffle iron and bake for 6 minutes. Then lift the lid and evaluate the result. Some waffle irons cook the top better than the bottom, or vice versa. In this case, the waffles can be turned over and baked for another 1 minute.

Remove the soft Viennese waffles from the waffle iron with a spatula and place on a wooden board or wire rack to cool.

When the waffles become slightly warm, serve them with whatever your imagination dictates. Today I serve defrosted raspberries and blueberries, as well as a little powdered sugar. Enjoy your tea!
