Prepare the ingredients. If using frozen meat, take it out 8-10 hours before and defrost it in the refrigerator, then let it sit at room temperature. For stewed chicken in sour cream in a frying pan, both white and red fillets are suitable. You can also cook turkey using this recipe.
It is better to take sour cream with medium fat content — 20%. But, in general, any one will do if you don’t have one at hand. But it is better to choose standard mustard — “Russian” or “Stolovaya”, but not grainy, as it has a slightly sour and too mild taste.
Leeks are a great addition to the recipe, but are not required. You can take onions, white onions, shallots and even red onions. Including from freezing, if you prepared something in the summer. I use chicken broth to make this recipe, but you can use plain water. Or take vegetable, beef, mushroom broth.
Tip: frozen broth should be obtained in advance; it can be defrosted at room temperature (3-4 hours is enough for 0.5 liters).

Cut the fillet into large pieces or cubes — 3-4 cm. Immediately put the frying pan on high heat and pour a little vegetable oil into it.

Place the whole chicken into a frying pan (28 cm in diameter is fine) when the oil is hot. Fry for about 10 minutes, focusing on the appearance of a light golden crust and the evaporation of water.

Cut the onion into half rings or quarter rings if using onions.

Send the onion to the chicken, add more vegetable oil.

Fry until golden over high heat. This takes about 5 minutes.

Mix sour cream with flour and mustard. If the thickness of the sauce is not very important, you can omit the flour.

Combine the sour cream mixture with the broth and mix thoroughly.

Pour all the sauce into the chicken fried with onions, cover and bring to a boil over high heat. Don't forget to stir from time to time.
Then reduce the power to medium or slightly less (3/6 for an electric stove) and simmer the chicken in sour cream for 20 minutes. During this time, stir 2-3 more times.

A couple of minutes before it’s ready, add salt and black pepper and stir.
