Prepare the ingredients: durum wheat pasta nests can be small, like mine; as many as 11 pieces fit into a frying pan with a diameter of 28 cm. Or they can be larger, the main thing is not to place them too tightly to each other.
The next component is minced meat. Suitable pork, beef or mixed, with the addition of chicken or turkey. It is better to take 20% cream; it is not too fatty, but at the same time it tolerates prolonged heating well.
Tip: you can prepare a dish with coconut cream powder, diluting it in water according to the instructions on the package.
Tomato paste can also be replaced with pureed tomatoes or frozen purée of peeled tomatoes. Then the proportions will be approximately the following: 500 ml of chopped tomatoes instead of 300-400 ml of water.
I use leeks in the recipe, but the type of onion doesn’t really matter; you can use regular onions. The parsley can also be replaced with cilantro, basil or even dill — depending on your taste. The main thing is not to mix too many herbs and seasonings.

Cut the onion into small cubes and divide into 2 parts. If using leeks, cut them together with the green part.

Add half the onion to the minced meat, salt and pepper.

Add chopped parsley and mix thoroughly. There is no need to beat the minced meat.

Cut the carrots into small cubes or grate them on a coarse grater.

Heat 3-4 tbsp in a frying pan. l. vegetable oil and fry the remaining half of the onion. Fry over high heat for 3-4 minutes.

Add carrots to the onion, stir and fry for another 5-6 minutes over high heat, stirring frequently.

Add 1 tbsp. l. flour, stir and fry for 1 minute over high heat.

Add tomato paste and fry for another 1-2 minutes over high heat.

Combine the cream with hot, but not boiling water and stir.

Pour the mixture into the fried vegetables, mix thoroughly. You can use a whisk if the lumps don't want to break up. Bring to a boil over high heat.

Lay out the nests so that on top there is a part with convenient holes for laying out the minced meat.
Tip: work quickly so the pasta doesn't start to spread.

Place minced meat in each nest, pinching off from the total mass and slightly forming balls, but not too even.
Important: it is enough to take 30-35 g of minced meat, as for a small meatball, if the nests are small. If the pasta is larger, you can take 50-60 g of meat.

Pour 2-3 tbsp of sauce from the frying pan over each nest. l. Cover with a lid, bring to a boil and simmer over medium heat for 30 minutes (3/6 for an electric stove).

After about 15 minutes, you can pour the sauce over the nests again, paying special attention to the pasta, not the meat.

Remove the finished dish from the heat and immediately place it on plates, pouring over the sauce from the frying pan. When hot, it is especially tasty and tender. You can decorate with greenery if desired. Bon appetit!
