Prepare the ingredients for crispy eggplants.

Pour starch into a deep cup. Put the slices of eggplant in it.
I tried to use corn starch and potato. I did not notice much difference in the texture. Therefore, you can take the starch that you have at home.

Pour vegetable oil into a small pan or saucepan. Please note that eggplant should literally swim in oil without touching the bottom of the dishes.
Put a pan on medium fire. Warm up the oil very well.
