Detailed step-by-step recipe with photos: Step 1
-
Prepare all ingredients. Thaw the meat well. If it is not completely defrosted, it will release excess water during frying and you will not get a crust that will seal all the juices inside. Wash the onions and carrots. Pasta is taken at a rate of 60 to 100 grams of dry pasta per serving.
-
Step 2
Prepare the meat. Wash and dry the beef well with paper towels. Remove veins and film. Cut into medium pieces 3-5 cm thick.

Step 3
Peel the onion and cut into half rings. To prevent your eyes from watering, I recommend periodically moistening the knife with cold water.
-
Step 4
Peel the carrots and cut into half rings.
-
Step 5
Heat oil in a deep frying pan. Over high heat, fry the beef in small portions on all sides until golden brown. If you lay out all the beef at once and the pieces fit tightly together, you won’t get a crispy crust and the juice inside won’t be sealed. When ready, remove the meat into a separate container.
-
Step 6
In the same oil, but over medium heat, fry the onion until golden brown, stirring. This will take about 3-5 minutes.
-
Step 7
Add chopped carrots, garlic, paprika and pepper to the onion. Fry everything together, stirring, for 3-5 minutes over medium heat.
We add spices during the frying stage as it brings out the flavor of the spices better. If you have fresh garlic, you need to chop it.
-
Step 8
Add tomato sauce. Mix well and heat on fire for another 3 minutes.

Step 9
Return the meat to the pan. Mix.
-
Step 10
Add a glass of hot water and salt. Mix well, cover and set aside for 30 minutes over low heat.
-
Step 11
After 30 minutes, add bay leaf. We do not add it immediately, as it produces bitterness when cooked for a long time. Cover the pan again with a lid and remove to low heat for another 30 minutes. If the water has evaporated and the mass is very thick, you can add a little more hot water.
-
Step 12
Boil the pasta separately. For 200g of dry pasta you will need about 1.5l of water. Bring water to a boil over high heat; when it boils, add salt. And throw the pasta into boiling water. Cook according to the time indicated on the package.

Step 13
The sauce can be mixed with pasta or served separately. If you plan to eat it all at once, then you can mix everything, but if stored for a long time, the pasta mixed with the sauce will become mushy. It's better to keep them separate. Be sure to check the meat for softness; if it is still tough, leave to simmer for another 30-60 minutes.
