Prepare all ingredients and utensils for cooking. Wash the onions and carrots.
The chicken must be well defrosted so that it does not release excess water during frying and remains juicy and soft. You will need a deep frying pan with a lid.

Peel and chop the mushrooms.
If the mushrooms are large, cut the quarters in half; if they are small, only half is enough. I do not recommend washing champignons, as they absorb moisture very quickly, like a sponge. It is better to clean them with a brush or a damp paper towel, or remove the top layer.

Peel the onion and chop finely.
A small life hack: if your eyes are watery, periodically wet the knife with cold water, it should help.

Peel the carrots, cut into small cubes.
I do not recommend grating carrots for this dish. Cubes will give the dish better flavor and texture..

Remove skin, membranes, veins and bones from chicken thighs. Cut into small pieces.

Heat a frying pan with oil over medium heat. Send the chicken to fry. Fry until golden brown, stirring. This will take about 5 minutes.

Add onions to the chicken. Stir and fry for 2-3 minutes until the onion turns golden.

Add carrots to the pan, stir and fry everything together for another 3-5 minutes.

Add mushrooms and spices to the pan. Fry everything together for 3-5 minutes.
Mushrooms cook quickly, so we add them last. Spices also need to be added at the frying stage, so they will better reveal the taste and aroma.

Pour the couscous into the pan and spread evenly with a spatula.
Couscous is beautiful because it does not need any pre-processing; it does not require washing or steaming.

Pour a glass of warm water into the frying pan and reduce heat to low.
The water should cover the entire surface of the couscous by about 1 centimeter.

Cover the pan with a lid and simmer the couscous with chicken over low heat for literally 3-5 minutes until all the moisture has evaporated.
The cereal cooks very quickly, and the filling is already all fried, almost ready.

Couscous with chicken and mushrooms in a frying pan is ready! Serve with fresh finely chopped herbs and a slice of lemon.
