Prepare the ingredients for the preparation of coffee in a Turk.
It is important to choose the right Turk. Copper with a narrow neck and a wide bottom is best suited — this design helps to evenly distribute heat and reveal the taste.
Water should be of high quality, filtered or spring, because it will become the basis of the drink.
I recommend using the freshly ground coffee — it is best to grind grain right before cooking to preserve their rich aroma. It is better to give preference to arabica, but you can mix varieties for a unique taste accent.

Add cold water to Turku, leaving a little space to the edges. Pour ground coffee, evenly distributing it on the surface of the water. At this stage, add sugar if you like sweet coffee.
I added a little cinnamon for taste. If you have ground cinnamon, it is also perfect.

Step 3
Put a Turku on the smoother fire. Patience is your main assistant: you can’t rush, because coffee in a Turk requires slow heating. To trace how the first bubbles appear on the surface is a sign that the drink begins to “wake up”.
No need to mix! Let coffee interact with water naturally, creating a thick foam. It is she who retains all the aromas and protects the drink from the evaporation of taste oils.

Step 4
When the foam begins to rise to the edges of the Turks, be especially attentive. The main rule is to prevent coffee from boiling!
As soon as the foam reaches the maximum height, remove the Turku from the fire, give the pens a little bit, and then put it on the stove again. This process can be repeated 2-3 times-it will enhance the saturation of taste.

Step 5
Remove Turku from the fire. Give coffee stand for 30 seconds. This allows sediment to settle to the bottom, and the drink becomes more transparent. Next, pour coffee into a heated cup, trying to keep the foam.

Now you know how to cook coffee in a Turk.
