To prepare a fragrant and tasty lemon syrup at home, we will need the following ingredients: lemons, water, granulated sugar and ground turmeric (optional).

First of all, you need to prepare lemons. I have 5 pieces (total weight — 500 grams). I wash them and put them in a deep dish. Pour boiling water so that the water completely covers the fruits. We leave for 2-3 minutes, after which we drain the water, and wipe the lemons dry. Thanks to a hot bath, we will get rid of wax, which cover imported fruits. In addition, high temperature helps to get maximum juice.

To flavor home syrup, we need a zest of lemons. This is a thin yellow layer of the peel. Cut the zest with a knife or vegetable product, and from the fruits, squeeze the juice in any way that you like more. You can use a special juicer for citrus fruits or just a fork.

We filter lemon juice, getting rid of the remains of the pulp and bones. As a result, I managed to get 220 milliliters of juice and 40 grams of zest.

Pour 1.5 cups (300 grams) in a thick -walled pan or saucepan.

Add the entire lemon zest and 1 cup (250 milliliters) of drinking water. Put on medium fire and, stirring, let it boil. After that, cook 15 minutes with very moderate heating.

Then pour lemon juice.

Mix and cook for another 15 minutes after a second boiling.

In the end, add literally a pinch of ground turmeric for color. This spice is a natural dye of yellow. Just do not overdo it, since the taste of turmeric is also quite strong. Mix, boil for a couple of minutes and turn off the fire.

Let us cool a little and filter lemon syrup through a sieve. The zest of lemon was saturated with sugar and juice, it became practically tsukatas — it can be eaten, like a dessert, to add to baking.

After cooling, we pour the finished syrup into a suitable storage dish (you can both in the refrigerator and the kitchen cabinet). In total, the ingredients that are indicated in the recipe, I get 420 milliliters of fragrant concentrate.

You can make on its basis impregnation for cakes and cakes, quickly and simply prepare home lemonade or cocktail.
