Prepare the ingredients. Choose apples ripe, but dense, without dark spots and wormholes. Varieties with a bright aroma and a balanced taste are best suited: sweet varieties will give the drink softness, and sweet and sour-light fresh sourness. For 4.5 liters of water, about 1–1.2 kg of apples and 200–250 g of sugar will be required. If you like a more saturated taste, you can mix apples of different varieties — for example, add a little «antonovka» to sweet apples. This will make the taste deeper and more interesting.

Wash the apples thoroughly under cold running water to wash off the dust and possible residues of the wax coat. Dry a towel.

Cut each apple into 4-6 slices, remove the core with seeds and hard partitions. It is not necessary to remove the skin: it gives the compote a beautiful golden-amber shade and a more saturated aroma. If the apples are too large — cut the slices even in half so that they give a taste to taste.

Pour 4–4.5 liters of clean water into a large pan and put on strong fire. Wait for the moment when the first bubbles appear on the surface, and then wait for active boiling.
For a drink, it is better to use filtered water — then the compote will turn out to be transparent and beautiful.

When the water boils, pour 200–250 g of sugar and thoroughly stir with a wooden or silicone spoon until completely dissolved. The syrup should become transparent, without crystals.
The amount of sugar can be adjusted to taste: for a lighter option, 150 g is enough, and if you want sweets, you can increase to 300 g.

Gently lower the apple slices into boiling syrup. Again bring the water to a boil, and then reduce the fire to medium. Cook apples for 10-15 minutes until they become soft and begin to give juice and aroma to the drink. It is important not to digest apples — they must maintain shape and do not turn into mashed potatoes.
For a variety of taste, you can add 1-2 thin slice of lemon, a pinch of vanilla sugar or cinnamon stick — such additives will make the compote spicy and unusual.

Remove from heat and cover with a lid. Leave the compote from apples in the pan for 20-30 minutes. During this time, apples will completely give taste and aroma, and the compote will become more saturated and deep. If time allows, you can insist the drink longer — for example, an hour. Then the taste will turn out to be especially rich.

The compote from apples in the pan for every day is ready. It can be served hot — it will warmly warm in the cold season, especially with a piece of lemon or a spoon of honey. In summer, it is better to completely cool and serve with ice or fresh mint leaves for a refreshing effect.
The finished compote is transparent, beautiful amber color, with a slight apple aroma. It tastes with refreshing, moderately sweet, with delicate sourness. Slices of apples become soft, but retain their shape — they can be eaten separately as a dessert. This drink is universal: it can be served in the daily menu for dinner and in a beautiful countess on the festive table.
